SEASONAL FRUIT AND VEG FOR JANUARY

What seasonal vegetables are available at this time of year?

Citrus, cabbage, carrots, potatoes, beetroot, onion, reddish, kale and grapefruit are all at their peak this month. We have included our favourite January recipes, along with a few other veggies to add to your shopping cart this month below.

How to best prepare current in season vegetables?

Our favourite healing winter soup

POTATO & LEEK SOUP

Cook the leeks with olive oil, sauté the leeks for 10 minutes. Then add some crushed garlic and cook for another minute.

Add diced potatoes, salt, bay leaf, thyme, and vegetable stock. Increase the heat to high and bring to a boil. Let it cook for 15 minutes until the potatoes are perfectly soft.

Blend together, but remove the bay leaf and thyme sprigs beforehand. Use a blender to blend the soup until it’s to your liking.

Our favourite winter salad

GRATED CARROT & BEET SALAD

Grate 2 carrots per 1 beetroot with a medium sized cheese grater.

Season with lemon, olive oil and apple cider vinegar and salt.

Mix together and store in the fridge to serve as a side salad with any meal

  • Parsnips
  • Swedes 
  • Leeks
  • Kale
  • Apples
